Step-by-step recipe
Step 1:
Break the eggs into a mixing bowl, add salt and beat with a mixer for half a minute.
Step 2:
Add vanilla and regular sugar and continue beating until fluffy and airy, 8-10 minutes.
Step 3:
Add baking powder to the flour and sift it into the beaten eggs, gradually. Mix in one direction with a whisk or spatula.
Step 4:
Line the bottom of the pan with parchment paper and pour the batter into it. Smooth the top slightly.
Step 5:
Bake in a preheated oven at 180 degrees for 25-30 minutes.
Step 6:
Let the finished sponge cake cool for about 10 minutes, run a sharp knife around the edge, remove the pan and turn it over onto a wire rack to cool completely.
Step 7:
Wrap the biscuit in film or a bag and put it in the refrigerator.
Cooking tips
If your mixer is not very powerful, separate the eggs into whites and yolks and beat them separately with half the amount of sugar, and then combine.
The oven should be well preheated by the time your dough is ready.
To remove air bubbles, you can stir the dough with a wooden stick in a spiral from the center to the edge.
