Baked apricots with honey and nuts
Origin of the recipe
This recipe has its roots in the culinary traditions of the Caucasus, Central Asia, and the Middle East—regions where apricots have been cultivated since ancient times. There, they were often prepared with honey, considered not only a sweetener but also a healing food, while nuts (especially almonds, walnuts, and pistachios) were added for texture and nutrition. Baking intensified the sweetness of the ripe fruit and created a delicate, almost caramel-like consistency. This dish could be served as a standalone dessert, as a pie filling, or even as part of a holiday meal. Today, this recipe is popular as a light, vegetarian, and seasonal dessert option, combining naturalness with deep flavor.

Prepare the apricots: wash them thoroughly and dry them. Cut each apricot in half and carefully remove the pit.

Line the bottom of a baking sheet with parchment paper to prevent the apricots from sticking.
Step 3:
Arrange the apricots: Place the apricot halves, cut side up, close together on the baking sheet.
Step 4:
Place one walnut in the center of each apricot half.
Step 5:
Drizzle with honey: Using a spoon, drizzle honey evenly over each apricot, making sure to coat each half.
Step 6:
Sprinkle with cinnamon: Sprinkle the apricots with ground cinnamon.
Step 7:
Preheat oven to 185°C (350°F). Place the baking sheet with the apricots in the oven and bake for about 15 minutes, until the apricots are soft and golden brown.
Step 8:
To serve: Remove the pan from the oven, let cool slightly, and serve!
Cooking tips:
Choose ripe apricots: the riper the apricot, the softer and sweeter it will be after baking. Avoid fruits that are too green or hard.
Adjust the amount of honey as needed. If you prefer a less sweet dessert, use less honey or add it after baking.
Serve with yogurt: Warm baked apricots go great with plain Greek yogurt or sour cream.
Use a baking dish with sides. This will help collect any juices that escape during baking and prevent staining your oven.
Cinnamon - to taste: if you like a richer flavor, increase the amount of cinnamon to 1 teaspoon.
