Strawberry pancakes are a popular dish that combines the traditions of Russian and other Slavic cuisines. The origins of pancakes date back to ancient times, when they were prepared as a symbol of the sun and spring, as their round shape resembled the solar disk. Today, strawberry pancakes can be found not only in Russia but also abroad. They are prepared with a variety of fillings, from fresh berries to jam or cream, making them a versatile dessert. These pancakes are often served with sour cream or whipped cream.

Step-by-step recipe
Step 1:
Using a whisk, lightly beat the egg, milk, vegetable oil and honey in a bowl.
Step 2:
Sift the flour directly into the mixture and stir well.
Step 3:
Add baking powder and mix.
Step 4:
Add 2 drops of food coloring to the mixture and stir until the coloring is completely distributed, giving the dough a pink color.
Step 5:
Pour the mixture into the bag and squeeze out all the air.
Step 6:
Tie or clip the top of the bag, leaving a corner at the bottom.
Step 7:
Remove the stems from the strawberries.
Step 8:
Cut each berry in half lengthwise.
Step 9:
Using a cookie cutter, cut out a heart shape from each berry half. It's important that the berries are at least slightly larger than the cookie cutter.
Step 10:
After cutting the corner of the dough bag, press out small pancakes onto a heated frying pan.
Step 11:
Fry each pancake on both sides without oil.
Step 12:
Stack the finished pancakes in stacks of 4-5 pieces.
Step 13:
Pierce each stack with a toothpick with a strawberry shaped like a heart on it.
Cooking tips
Instead of a bag for forming pancakes, you can use a culinary syringe
Heat the pancakes gently on each side, just until the surface is lightly browned. This will keep them pink. You can line the bottom of the pan with parchment paper cut to the shape of the pan beforehand to prevent the pancakes from sticking.
Garnish the pancake dish with mint or basil leaves and serve with love.
