Origin of the recipe

This unique fried cookie is often confused with Russian khvorost, but it's not as crispy and is fluffier and richer. Its ear-like shape has ritual significance and signifies attention to the wisdom of Buddha. Boovs, which are fried at datsans (monasteries), are often round or rectangular, with sacred symbols embossed on them.

Step-by-step recipe

Step 1:

Place flour in a bowl, make a well, pour in milk, add sugar, baking soda, salt, beat in eggs, add melted butter and mix from the edges to the center.

Step 2:

Knead the dough in a bowl with your hands, sprinkling it with flour.

Step 3:

Dust the surface with flour, divide the dough into two parts and roll out each part to a thickness of 5 mm.

Step 4:

Cut the dough into diamonds, make a slit in the middle of each one and turn it out through it.

Step 5:

Heat oil in a deep frying pan and fry the boowies on both sides until golden brown.

Step 6:

Serve sprinkled with powdered sugar or drizzled with condensed milk.

Cooking tips

Take flour for dusting from the total amount.

The amount of ingredients can be divided into two parts if you are not expecting many guests for tea.

Place the finished boovs on a paper towel to remove excess oil.
