Origin of the recipe

In southern India, these steamed flatbreads made from two types of rice and mung beans are often the first solid food babies try. A special steamer with indentations for idli is found in almost every home, but they can be easily and simply made in a regular steamer.

Idli is a delicate and healthy Indian dish made from rice flour and fermented dough. It's an ideal breakfast or light snack, served with flavorful sauces or chutneys.

Step-by-step recipe

Step 1:

Rinse the regular and parboiled rice together thoroughly and place in a bowl.

Step 2:

Add fenugreek seeds and soak for 4-5 hours.

Step 3:

Place the peeled mung beans (urad dal) in a clean bowl and soak for 4-5 hours.

Step 4:

Grind the soaked cereals one by one in a blender until they become creamy and combine in a clean bowl.

Step 5:

Stir, add salt, cover tightly with film and leave to ferment for 8-10 hours.

Step 6:

Pour the batter into the wells of the idli moulds, place in a steamer and cook on medium heat for 15 minutes.

Cooking tips

In South India, every home has an idli steamer, but in Russia, such steamers are practically impossible to find. Use small saucers or cups and a regular steamer.

You can check if the idlis are done by touching them with your finger. If the dough is sticky, it needs to be steamed a little longer.
