Lentils are a nutrient-rich legume widely grown in Asia. They're especially valuable for vegetarians and especially vegans, as they contain a lot of protein, as well as essential vitamins and minerals. If you've recently become a vegetarian, there's no reason to give up such a popular dish as cutlets—just try lentils instead of meat!
Step-by-step recipe
Step 1:
Soak red lentils in water that covers them by about two fingers for 2 hours.
Step 2:
Drain the water from the lentils through a sieve and place the lentils in a blender.
Step 3:
Chop a large shallot and add to the lentils.
Step 4:
Crush two cloves of garlic and add to a blender.
Step 5:
Grate a small carrot on a coarse grater and add to the rest of the vegetables.
Step 6:
Chop fresh parsley and add to a blender.
Step 7:
Add a tablespoon of tomato puree, salt and pepper.
Step 8:
Grind all ingredients until smooth.
Step 9:
Grease a frying pan with olive oil.
Step 10:
Form flat patties a little over a centimeter thick.
Step 11:
Fry for about 3 minutes on each side until crispy and serve with your favorite sauce.
Cooking tips
To make chopping the garlic easier, crush it first with a wide-bladed knife.
You can buy ready-made tomato puree or make it yourself by grinding tomatoes into a smooth paste in a small blender or using any other method.
It's best to use a non-stick frying pan so you don't need a lot of oil.
