Bean cutlets
Origin of the recipe
If you've given up meat but still eat eggs, you definitely shouldn't forget about your childhood favorite cutlets. Beans, rich in plant-based protein, are a great substitute for meat, and eggs will keep the minced meat from falling apart and add a satisfying touch.

Step-by-step recipe
Step 1:
Place cooked red beans in a bowl.
Step 2:
Add two eggs and blend everything with an immersion blender.
Step 3:
Finely chop the onion and carrot.
Step 4:
Pour 50 ml of olive oil into the frying pan, add the vegetables, stir and fry until done.
Step 5:
Add 100 g of rinsed rice and 200 ml of water to a saucepan or cauldron. Cook over medium heat until tender.
Step 6:
Add stewed vegetables and boiled rice to the bean mince, add salt, pepper and spices to taste, mix with a fork until smooth.
Step 7:
Form patties.
Step 8:
Dredge each cutlet in flour or breadcrumbs.
Step 9:
Fry the cutlets in vegetable oil for 3 minutes on each side over medium heat.
Step 10:
Place the cutlets on a plate and serve with sour cream.
Cooking tips
Minced beans can be prepared using either a blender or a meat grinder.
Place the finished cutlets on paper towels to remove excess oil before serving.
