Step-by-step recipe
Step 1:
Pour unpasteurized milk into a saucepan and heat over low heat, stirring constantly.
Step 2:
Check the temperature with your finger. When the milk becomes too hot, turn off the heat.
Step 3:
Gradually pour in the vinegar, stirring.
Step 4:
Carefully gather the cheese curds together.
Step 5:
Fish out and squeeze out the cheese.
Step 6:
Warm the whey in the microwave and return the cheese to it. Let it sit in the hot whey for 5-6 minutes, occasionally squeezing and kneading it like dough.
Step 7:
Remove the cheese and place it in ice water for 1-2 minutes, dipping and squeezing.
Step 8:
Wrap the cheese in plastic wrap and place in the refrigerator or freezer.
Cooking tips
Milk that is sold in cardboard boxes is not suitable for cheese making.
Constantly monitor the temperature of the milk, do not overheat it.
To make water ice cold, throw ice cubes into it.
If you plan to grate mozzarella, freeze it.
