Step-by-step recipe
Step 1:
Wash the lemon and squeeze the juice out of it.
Step 2:
Bring the milk to a boil.
Step 3:
Pour in lemon juice in a thin stream, stirring.
Step 4:
When the milk has curdled, place a colander in a deep saucepan, line it with cheesecloth and separate the curds from the whey.
Step 5:
Hang the cheese in cheesecloth and let the remaining whey drain.
Step 6:
Wrap the cheese in fresh cheesecloth and place it under a weight overnight.
Cooking tips
Whey from cheese can be used for pancakes.
If you want to add spices to the cheese, do so before placing it under the weight.
