Homemade pizza with mushrooms
Origin of the recipe
Pizza is perhaps the most famous dish of Italian cuisine. Its origins go back to ancient Egyptian date-and-cheese flatbreads that warriors baked on their shields while on campaign, and the recipe then spread to ancient Greece and Rome. Modern pizza emerged in Italy in the 16th century, after tomatoes became popular. Pizza toppings can be made with virtually anything—from vegetables and mushrooms to sausage and seafood.

Step-by-step recipe
Step 1:
In a bowl, mix flour, dry yeast, sugar and salt.
Step 2:
Add 2 tablespoons of oil and water. Knead the dough until elastic.
Step 3:
Cover the bowl with the dough with a lid or cling film.
Step 4:
Clean the mushrooms from the outer film and dirt. Rinse them.
Step 5:
Cut the mushrooms into thin slices.
Step 6:
Boil the chicken fillet and separate it into fibers.
Step 7:
Cut the olives into circles.
Step 8:
Grate the cheese on a coarse grater.
Step 9:
Grease the frying pan with oil.
Step 10:
In a small bowl, combine tomato paste and 2 tablespoons olive oil.
Step 11:
Punch down the dough and stretch it across the pan, to the edges.
Step 12:
Spread the tomato paste evenly over the dough, avoiding the edges.
Step 13:
Spread half the cheese and all the chicken evenly over the pizza.
Step 14:
Place the mushroom slices evenly over the pizza, thinking about how you will cut it.
Step 15:
Add olives, pepper, and salt. Top with the remaining cheese.
Step 16:
Bake in a preheated oven for 15-20 minutes at 200 degrees.
Cooking tips
Champignons are easier to handle than other mushrooms. They can be simply peeled, sliced, and added to pizza.
If you decide to use frozen mushrooms, you should first fry them until the moisture evaporates, and only then add them to the pizza.
