Unlike our usual pancakes, which are fried in a pan, this pancake is poured into a mold and baked, creating a delicate, slightly spongy texture. Step-by-step recipe
Step 1:
Break the eggs into a bowl, add 3 tablespoons of sugar and a pinch of salt.
Step 2:
Beat eggs and sugar with a whisk until smooth.
Step 3:
Gradually pour in half of the milk, continuing to whisk.
Step 4:
Sift the flour into a bowl and mix gently to avoid lumps.

Add melted butter and stir.

Then pour in the second half of the milk, mix thoroughly and leave to sit for 10-15 minutes.
Step 7:
Line a baking sheet with parchment paper and brush it with vegetable oil.

Pour the dough into the pan, spreading it evenly over the surface.
Step 9:
Place the baking tray in an oven preheated to 220°C and bake for 15-20 minutes.
Step 10:
Remove the finished Finnish pancake from the oven and let it cool slightly.
Step 11:
Carefully cut the pancake into rectangles.
Step 12:
Spread filling on each rectangle - chocolate spread, cottage cheese mixture or cream cheese.
Step 13:
Roll each rectangle into a roll. Serve the Finnish pancake immediately after cooking!
Cooking tips
For best dough consistency, be sure to sift the flour before adding it.
Don't skip the dough resting stage - this will allow the gluten to relax, and the pancake will be more tender.
When baking, do not open the oven to prevent the pancake from falling.
Use a quality filling - it should be liquid enough to spread easily over the surface.
If you want to make a Finnish pancake sweeter, increase the amount of sugar in the batter.
