Quiche with cheese and spinach
Origin of the recipe
Quiche is considered a French dish, but similar open pastry pies filled with a cream and egg mixture are also found in English cookbooks. Quiche fillings can vary widely, from meat and fish to purely vegetarian. Try making a quiche filled with two types of cheese and spinach.

Step-by-step recipe
Step 1:
Place flour and diced chilled butter into a blender and mix until crumbs form.
Step 2:
Pour in 4-6 tablespoons of ice water and stir until smooth.
Step 3:
Wrap the ball of dough in plastic wrap and refrigerate for 30 minutes.
Step 4:
Finely chop the white and red onions.
Step 5:
Melt 2 tablespoons of butter in a frying pan and pour in a tablespoon of olive oil.
Step 6:
Add the onion to the pan and fry for 5 minutes.
Step 7:
Add 2 crushed garlic cloves and stir.
Step 8:
Add spinach leaves and simmer for 7-8 minutes.
Step 9:
Drain the liquid from the vegetables through a sieve.
Step 10:
Dust the surface with flour, place the dough on it, sprinkle it with flour and roll it out with a rolling pin to a thickness of 3 mm.
Step 11:
Place the dough circle into a serrated metal pan, press down, trim the edges and prick the dough with a fork.
Step 12:
Beat three eggs in a bowl and whisk until combined. Add 240 ml of heavy cream, 1/4 teaspoon of black pepper, and 1/4 teaspoon of grated nutmeg. Whisk well.
Step 13:
Line the dough pan with kitchen paper, pour dry peas or rice into the pan and smooth it out.
Step 14:
Bake in the oven for 15 minutes at 175 degrees, then remove the paper and weight and bake for another 5-10 minutes until golden brown.
Step 15:
Place the cooked spinach evenly into the pastry basket, smooth it out and top with a layer of grated cheese and pieces of blue cheese.
Step 16:
Pour the egg and cream mixture over the filling.
Step 17:
Bake for 35 minutes until golden brown.
Step 18:
Let cool, remove from pan, place quiche on a plate and serve.
Cooking tips
Gruyere cheese can be replaced with Emmental or Edam cheese if necessary.
If you don't have Gorgonzola cheese, you can use any type of blue cheese.
