Origin of the recipe

Surely everyone has tried this Eastern delicacy, but the store-bought version can't even begin to compare to the homemade dessert. In Tatarstan, chak-chak is a festive treat—a huge dish with a tower of crispy sticks or balls of dough soaked in honey, a highlight of the wedding table. The entire family prepares chak-chak for weddings: young women cut the dough, married women fry it, and older women drizzle it with honey.

Classic Tatar chak-chak with honey — is a traditional dessert consisting of fried dough coated in a fragrant honey syrup. It's easy to make at home and adds a touch of class to any table with its crispy texture and sweet flavor. This recipe is the perfect way to immerse yourself in the rich culinary tradition of Tatar cuisine and treat yourself and your loved ones to a true delicacy.

Step-by-step recipe

  1. In a large bowl, whisk together 4 eggs, salt and baking soda until smooth.
  2. Gradually add flour to the eggs and continue kneading the dough.
  3. When the dough becomes smooth and elastic, put it in the refrigerator for 30 minutes, wrapped in a bag or cling film.
  4. Sprinkle the dough with flour on all sides and roll it out very thinly.
  5. First, cut the dough lengthwise into strips of equal width.
  6. Cut these strips of dough crosswise into even smaller strips.
  7. Heat the oil in a saucepan and drop in a few strips of dough. The oil should be hot enough to cause the dough to puff up quickly.
  8. When the pieces are golden, remove them from the oil and repeat the process with the remaining dough, being careful not to use too much at a time.
  9. Mix sugar and water in a bowl and place on the stove.
  10. When the water and sugar begin to boil, add honey and cook for 3 minutes, stirring constantly.
  11. Pour the resulting syrup over the swollen dough and stir.
  12. Place the chak-chak in a form with high edges, smooth it out and press down slightly.

Cooking tips

As the dough puffs up in the oil, stir it frequently to ensure even cooking.

For extra flavor, sprinkle with toasted sesame seeds.

Elya! This is a recipe for idiots. Probably 4 cups of flour or 300 g of flour. I make it with that amount of flour.
