Cheesecake literally means "cheesecake." It's a baked good made with cream cheese, and is very popular in English and American cuisine. The crust is made with cookie crumbs, and the topping is incredibly tender and melts in your mouth. Try this cheesecake with thick sour cream instead of the usual Philadelphia cheese.

Step-by-step recipe
Step 1:
Grind 200 g of dry biscuits in a food processor.
Step 2:
Add melted butter and blend again.
Step 3:
Pour the crumbs into a round, collapsible form and tamp it down to the bottom.
Step 4:
Bake for 7-8 minutes at 180 degrees.
Step 5:
Squeeze the thick sour cream through a sieve, place it in a bowl, add sugar and beat with a mixer.
Step 6:
Add 4 large eggs one at a time, continuing to mix.
Step 7:
Add vanilla extract, stirring. Add lemon zest and cornstarch, and mix with a mixer.
Step 8:
Pour the resulting mixture into the mold on top of the cake.
Step 9:
Bake for 45-50 minutes at 160 degrees.
Step 10:
Turn off the oven and leave the pie inside for another hour.
Step 11:
Cool the pie for an hour, then refrigerate for at least 4 hours.
Step 12:
Decorate the pie with jam or fruit if desired and serve.
Cooking tips
You can press the cookie crumbs into the bottom using a special hand press, but if you don’t have one, the bottom of a glass will do.
For cheesecake, it is best to use the thickest homemade sour cream that is sold on the market.
During baking, place a container of water under the rack to prevent the center of the cheesecake from drying out and to keep it moist.
