Step-by-step recipe
Step 1:
In a bowl, combine honey and black balsamic vinegar.
Step 2:
Place the bowl in a double boiler.
Step 3:
When steam rises, begin to gradually pour in the olive oil, continuously stirring the sauce with a whisk.
Step 4:
Season the sauce with pepper and salt and let cool.
Cooking tips
True black balsamic vinegar, or simply balsamic vinegar, is made from grape must by boiling it down and aging it for a long time (up to 12 years) in barrels. It's an expensive but highly aromatic ingredient. There are also cheaper, industrial versions of balsamic vinegar, made from wine vinegar with various additives.
A double boiler is a bowl placed over a pan of simmering water. This prevents the contents of the bowl from heating up too quickly or too much.
