Classic teriyaki sauce
Origin of the recipe
Teriyaki roughly translates as "shiny roast," as it was originally used in Japan to create a beautiful caramelized crust on fried meat or fish, due to its relatively high sugar content. Despite this, teriyaki is considered low-calorie and healthy, and its unique aroma lifts the mood and whets the appetite. Today, it's added to any dish, even salads.

Step-by-step recipe
Step 1:
Pour wine, soy sauce and sugar into a saucepan.
Step 2:
Cut the ginger into slices, crush the garlic and add them to the pan.
Step 3:
Bring the sauce to a boil and simmer for about 50 minutes over medium heat until slightly thickened. The sauce will reduce by about half.
Step 4:
Strain the sauce through a sieve or cheesecloth and cool.
Cooking tips
When choosing a saucepan, choose a very tall one so that the foam does not run over and splatter the kitchen with brown splashes.
There are several versions of teriyaki sauce. The thicker version is suitable for adding to cooked dishes, while the thinner version is used for marinades.
To cook fish or meat in teriyaki, it is recommended to soak them in the sauce for at least two hours, or overnight.
