Chicken soup with nettles

Rich in nutrients, the succulent nettle has been used as a food and medicinal herb since ancient times wherever it grows. Nettle contains calcium, magnesium, iron, and vitamins A and B. Nettle is most often added to soups, as cooking destroys the scalding compounds it contains. Try this delicious and healthy summer chicken soup with nettles and vegetables.

Step-by-step recipe
Step 1:
Cut the chicken into small pieces and place in a saucepan.
Step 2:
Pour in water, bring to a boil and skim off the foam.
Step 3:
Cut the potatoes into small cubes and add to the pan.
Step 4:
Cover and simmer for 10 minutes over low heat.
Step 5:
Finely chop the onion, pour vegetable oil into the frying pan, add the onion and fry for 3 minutes over medium heat.
Step 6:
Finely chop the carrots, add to the pan, stir and fry for 3 minutes over medium heat.
Step 7:
Finely chop the tomatoes, add to the pan, stir and fry for 3 minutes over medium heat.
Step 8:
Add the fried vegetables to the pan, season with salt and pepper and stir.
Step 9:
Bring to a boil, cover and simmer for 5-7 minutes over low heat.
Step 10:
Chop the young nettles, add them to the pan and stir.
Step 11:
Add lemon juice, stir and cook for 3-4 minutes over low heat.
Step 12:
Add green onions, stir and remove from heat.
Step 13:
Ladle the soup into bowls, garnish with half a boiled egg if desired, and serve.
Cooking tips
Use only nettles harvested from your garden or forest. Nettles from cities or roadsides contain heavy metals from exhaust fumes.
Young nettle plants are suitable for soup—their stinging cells haven't fully developed yet. Rinse the nettles with cold water and refrigerate for a couple of hours.
