Classic okroshka with sausage, kefir, fresh cucumber, and potatoes
Origin of the recipe
Classic okroshka with kefir sausage is a traditional Russian cold dish popular in the summer. Originally made with kvass, okroshka has evolved to include kefir, which gives the soup a milder, more refreshing flavor. The recipe uses fresh cucumbers, boiled potatoes, and sausage—ingredients widely available in Russian cuisine. This version of okroshka is especially popular at home due to its ease of preparation and ease of consumption, while retaining the traditional flavors of a Russian cold soup. On a hot summer day, classic okroshka with kefir (with fresh cucumber and potatoes) is a true salvation! This cold summer soup is both filling and refreshing. Okroshka with kefir is an excellent option for those who don't like kvass or for whom it is contraindicated.
