Step-by-step recipe
Step 1:
Peel and finely chop the onion.
Step 2:
Pour vegetable oil into a saucepan and fry the onion.
Step 3:
Dice the carrots and add to the onion.
Step 4:
Peel and dice the potatoes and add them to the pan. Stir.
Step 5:
Add vegetable broth and water to the pan, cover and cook.
Step 6:
Remove seeds from the bell pepper, dice and add to the pan.
Step 7:
Separate the broccoli into florets and cut each florets into two or three pieces. Stir.
Step 8:
Cut the zucchini into large cubes and add to the soup.
Step 9:
Cut the tomato into medium pieces and add to the pan. Stir.

Grate the ginger, crush the garlic and add to the soup. Stir.

Cooking tips
