Cooking tips
It's best to add the onion before frying the meat, as this will ensure it tastes better and fries better, rather than being cooked in the mixture of pork juice and oil.
Before braising, sear the meat over high heat to create a crust, which is delicious on its own and preserves the tender, flavorful flesh inside. The pork will cook gradually, but the crust can only be formed at the beginning.
Before frying meat, if you've fried onions in oil, it's best to temporarily remove them and let the oil warm up. This will help the meat brown better and prevent the onions from burning. The onion flavor will remain in the oil and be partially transferred to the meat.
