Let's prepare a quick and easy original red bean and cheese salad for the New Year, with a unique flavor thanks to Dijon mustard. This recipe is perfect for a hearty dinner after the holidays. The wonderfully delicious dressing used in this salad is sure to be a hit with other dishes, too.
Step-by-step recipe
Step 1:
Boil peeled carrots in salted water until soft.
Step 2:
While the carrots are cooking, cut the cheese into small cubes, the green onions into fine pieces, and the pickles into rings. Place the chopped ingredients in a bowl.
Step 3:
Mix 150 ml of milk with 150 ml of vegetable oil, adding salt and peppercorns. Beat with a mixer. Add 2 tablespoons of Dijon mustard and beat again. At this point, the sauce should thicken.
Step 4:
Cool the cooked carrots and cut them into small cubes into a bowl with the previously chopped ingredients. Using your hands, tear the lettuce leaves into small pieces. Add the beans to the salad.
Step 5:
Now pour enough of the dressing into the salad bowl. The remaining dressing can be saved and used in other dishes.
Step 6:
Mix your elegant salad well, place on a long plate or in your favorite salad bowl, and chill for about 1 hour.
Step 7:
Cut the bread into cubes. Mix olive oil with 2 grated garlic cloves and add salt (you can also add Herbes de Provence or any other seasoning you like). Toast in the oven for 10 minutes at 180°C.
Step 8:
Sprinkle with golden-brown croutons before serving.
Cooking tips
The vegetable mixture can be prepared in advance, stored in the refrigerator and seasoned with the sauce just before serving.
The salad dressing can be made not with milk, but with the water in which the beans were cooked (if you are using canned beans, then use the liquid from the can), then it will be a little thicker.
Instead of cheese, you can use a boiled egg in the salad.
