Classic okroshka with kefir
Origin of the recipe
The ancient Russian dish okroshka can be understood from its name. It's essentially a salad (unknown in Rus' as such) turned into a soup with a variety of cold fillings. Most often, it's made with kvass, although okroshka can even be made with beer. The classic okroshka made with kefir, sausage, and potatoes is a more traditional recipe, but it's delicious, healthy, and refreshing.

Boiled potatoes

Step-by-step recipe
Step 1:
Boil and cool potatoes and eggs in advance.
Step 2:
Thinly slice the green onions and chop the dill and parsley. Place the chopped herbs in a saucepan.
Step 3:
Add salt and mix well.
Step 4:
Cut fresh cucumbers into small cubes.
Step 5:
Cut boiled potatoes into small cubes.
Step 6:
Cut the cooked sausage into small cubes.
Step 7:
Chop the boiled eggs very finely.
Step 8:
Add sour cream to all the ingredients placed in the pan.
Step 9:
Pour in kefir, add salt, pepper, mustard and mix well.
Step 10:
Dilute the okroshka to the desired consistency with cold boiled or mineral water.
Cooking tips
Cut ingredients into roughly the same size.
Check the okroshka for salt before serving.
Cool in the refrigerator before serving.
