Champignons are a mushroom you can find in any store without having to venture into the forest. However, champignon soup is no less aromatic, filling, and delicious than wild mushroom soup. Making classic champignon soup is quite simple; even a novice cook can easily handle it.
Step-by-step recipe
Step 1:
Finely chop the onion and carrot. Pour vegetable oil into a saucepan, add the onion and carrot, and fry, stirring, for 1-2 minutes.
Step 2:
Cut the mushrooms into large slices, add to the pan and cook, stirring, for 2-3 minutes.
Step 3:
Dice the potatoes, add to the pan and stir.
Step 4:
Pour in one and a half liters of water and cook over medium heat under a lid for 10-12 minutes.
Step 5:
Add salt and finely chopped parsley to taste, stir and remove from heat.
Cooking tips
To prepare classic champignon soup, use a thick-walled saucepan, as we will fry some of the ingredients in it.
Do not overcook the vegetables, otherwise they will impart a bitter taste to the soup.
Champignon soup can be served with sour cream.
