Okroshka with herring is a wonderful option for those who enjoy not only a cold summer soup but also flavorful herring. And this isn't some new thing; okroshka with fish has been prepared in Rus' since ancient times. Any fish, including herring, was suitable for fish okroshka. And if you add herring as a savory addition to the familiar ingredients, it's even more delicious!

Step-by-step recipe
Step 1:
Boil potatoes and eggs.
Step 2:
Cut the boiled potatoes into small cubes and place in a deep bowl.
Step 3:
Peel the eggs, cut into small cubes and add to the potatoes.
Step 4:
Wash and dry fresh cucumbers, cut into small cubes and add to the remaining ingredients.
Step 5:
Cut the cooked sausage into cubes and add to the bowl.
Step 6:
Clean the herring and cut into medium pieces and add to the bowl.
Step 7:
Chop green onions, dill and parsley and add to the remaining ingredients.
Step 8:
Add sour cream, salt and pepper.
Step 9:
Pour in soda water and lemon juice and stir.
Cooking tips
For okroshka, it's best to boil potatoes in their skins in salted water and then peel them – this way they hold their shape better.
It would be better to add more greens.
Instead of soda, you can use kvass.
