Soups made with dumplings, "zatirukha," or full-fledged homemade noodles—pulled or sliced—have been around for centuries in many cultures. They're a simple and inexpensive way to make a first course much more filling and substantial. Try traditional Tatar chicken soup with homemade sliced noodles.

Step-by-step recipe
Step 1:
Place the chicken in a saucepan, cover with water, add salt, half an onion and cook for 20 minutes under a lid.
Step 2:
When the broth boils, skim off the scum.
Step 3:
Break an egg into a bowl, add salt, a tablespoon of water, and whisk.
Step 4:
Add flour, mix, knead the dough, wrap it in a bag and let it rest.
Step 5:
Peel and dice the potatoes.
Step 6:
Remove the onion from the soup and add the potatoes.
Step 7:
Dust the surface with flour, flatten and roll out the dough thinly.
Step 8:
Fold the dough like an accordion, cut into equal squares and unfold them into strips.
Step 9:
Cut the strips into equal pieces, stack them and chop finely.
Step 10:
Add noodles to the soup, stir and cook until done.
Step 11:
Serve garnished with herbs.
Cooking tips
Chicken thighs are best for soup.
It is best to roll out the dough by winding it onto rolling pins of different lengths.
