Step-by-step recipe
Step 1:
Cut the pumpkin into cubes and the onion into fairly small pieces.
Step 2:
Heat butter in a frying pan
Step 3:
Add pumpkin and onion, stir and fry for 5 minutes.
Step 4:
Pour vegetable broth or water into the pan, add the fried vegetables, bring to a boil and cook for 20 minutes.
Step 5:
Crush one clove of garlic and add to the soup.
Step 6:
Season with salt and pepper to taste, add cumin and stir.
Step 7:
Use an immersion blender to puree the soup until smooth.
Step 8:
Add cream. Stir the soup, heat through, and serve.
Cooking tips
Be careful not to let the onion burn, otherwise the soup will be bitter.
Non-vegetarians can use any broth.
