Spicy Korean Dried Radish Salad
Step-by-step recipe
Step 1:
Place dried daikon in a bowl and cover with water.
Step 2:
Add 2 tablespoons of soy sauce to the bowl and stir.
Step 3:
Soak daikon for 30–40 minutes.
Step 4:
In a separate bowl, mix sesame oil, rice syrup, 2 teaspoons soy sauce and 2 teaspoons water.
Step 5:
Chop the garlic.
Step 6:
Add crushed garlic, sesame seeds, and chili flakes to the bowl with the sauce. Stir.
Step 7:
Squeeze the soaked radish and place it in a bowl.
Step 8:
Heat vegetable oil in a frying pan, add radish to the pan and stir.
Step 9:
Cook the radish for 1 minute, stirring frequently.
Step 10:
Let the radish cool and transfer to a separate bowl.
Step 11:
Add the dressing to the radish and stir.
Step 12:
Chop the green chilli and green onion and add to the radish.
Cooking tips
You can dry radishes in advance for the entire year, and then enjoy them in dishes all year long, even out of season. This salad calls for dried radishes; substituting fresh ones will yield a completely different flavor.
Since the frying time for radishes is very short, the frying pan should be heated very hot in advance, otherwise the radishes will only begin to fry in 1 minute.
