Regular rolled oats can be used to make not only delicious and healthy English-style porridge, but also cookies and even cake. While not strictly considered "healthy eating," these baked goods are very beneficial for digestion and are perfect for morning tea. And, of course, they're delicious!
Step-by-step recipe
Step 1:
Place the large and small oat flakes into a bowl.
Step 2:
Add salt, baking powder, cinnamon, raisins, dried cranberries, diced dried apricots, mix with a spatula.
Step 3:
Pour milk into a clean bowl, add two eggs, honey, coconut oil, vanilla extract and whisk.
Step 4:
Pour the milk and egg mixture into the oatmeal with dried fruit, mix everything with a spatula and leave to sit for 15-20 minutes.
Step 5:
Place the mixture into a 20cm round baking pan and smooth it out with a spatula.
Step 6:
Bake for 35-40 minutes at 180 degrees until golden brown.
Step 7:
Place the cake in the pan on a wire rack to cool for 10 minutes, then remove it from the pan and cool completely on the rack.
Step 8:
Place on a plate and serve.
Cooking tips
All ingredients should be at room temperature.
If you are allergic to honey, you can replace it with maple syrup.
You can use absolutely any dried fruits to suit your taste.
It's best to bake the cake in a springform pan. This makes it easier to remove without damaging it.
