"Ryzhik" cake is a recipe that will impress any sweet tooth. The airy layers and delicate cream create a perfect combination of flavors that will captivate your senses. This cake will be a true highlight of any celebration!

Step-by-step recipe

Step 1:

Place honey and butter in a saucepan and melt over low heat, stirring constantly.

Step 2:

Add baking soda and cook, stirring constantly, until caramelized. Pour into a deep bowl and let cool slightly.

Step 3:

Break the eggs into a clean bowl, stir, add sugar and beat with a whisk until smooth.

Step 4:

Combine both mixtures, mix well and gradually add flour while stirring.

Step 5:

When the dough becomes thick, sprinkle the table with flour and knead the dough with your hands.

Step 6:

Roll the dough into a sausage, divide into several parts, roll into balls and refrigerate for 1 hour.

Step 7:

Dust baking paper with flour, flatten the dough ball, and roll it out with a rolling pin. Cut out a circle with a diameter of 20 cm. Prick the crust with a fork.

Step 8:

Preheat the oven to 180 degrees Celsius and bake the cake layers together with the trimmings until set, about 2-3 minutes. Repeat with all the cake layers and let them cool.

Step 9:

Mix boiled and regular condensed milk in a bowl until smooth in color.

Step 10:

Beat the softened butter with a mixer.

Step 11:

While continuing to whisk, add condensed milk in small portions.

Step 12:

Divide the cream portions evenly between the cake layers, leaving some to cover the assembled cake.

Step 13:

Assemble the cake by spreading the frosting over the layers and stacking them on top of each other. Cover the side of the cake with frosting.

Step 14:

Dry the scraps in the oven for 1 minute at 180 degrees, cool and crumble in a blender.

Step 15:

Cover the cake with crumbs, leave it on the counter for a couple of hours, then put it in the refrigerator overnight.

Cooking tips

It is better to sift the flour beforehand to avoid any lumps.

Add condensed milk into the cream little by little until it becomes smooth.

The recipe is good, but to make it perfect, you need to sprinkle some crushed walnuts between the layers of the cake. This will add a subtlety to the overall sweetness of the "ryzhik." My mother used to bake cakes like this.
