Step-by-step recipe
Step 1:
Rinse red lentils thoroughly, cook until done as directed on the package and drain in a sieve.
Step 2:
Cut the green onions into thin rings.
Step 3:
Pour olive oil into a frying pan and lightly fry the white part of the green onions.
Step 4:
Dice the yellow bell pepper, add to the pan and stir.
Step 5:
Rinse the canned red beans and add them to the pan. Stir.
Step 6:
Add boiled lentils and stir.
Step 7:
Add some grated lemon zest and lemon juice and stir lightly.
Step 8:
Add sweet paprika, tomato paste, maple syrup, balsamic vinegar, and Dijon mustard. Stir.
Step 9:
Season with salt and pepper, add the tops of the green onions, turn off the heat and stir.
Cooking tips
Before cooking, lentils, like rice, should be rinsed thoroughly to remove any impurities and excess starch. Rinse until the water runs clear.
Fry all the ingredients together over low heat for about 5 minutes to preserve their flavor and nutrients.
