Step-by-step recipe
Step 1:
Separate the whites from the yolks of 10 eggs. Season the whites with salt and beat them with a mixer until they form thick, white peaks.
Step 2:
While whisking, gradually add sugar. Beat until stiff peaks form.
Step 3:
Beat the yolks until fluffy, add to the beaten whites and mix with a spatula.
Step 4:
Sift flour and baking powder into the egg mixture. Mix.

Place the dough in a foil-lined pan and bake for 45-50 minutes at 170 degrees.

Turn the sponge cake over, remove the foil and cut the sponge cake lengthwise with a sharp knife into three layers.

Combine heavy cream and sugar and beat with a mixer.

Gradually add the cream cheese and beat again with a mixer, then fold in with a spatula.

Brush the bottom layer with sweetened milk and cover with cream, smoothing it out with a spatula.

Repeat the same with the next cake layer.
