Vatrushki with cottage cheese is a traditional Slavic dish with a long history and is popular in Russia, Ukraine, and other Eastern European countries. Today, vatrushki with cottage cheese remains popular and is often baked at home.

Step-by-step recipe
Step 1:
Pour warm milk into a bowl, add sugar, fresh yeast, two egg whites, vegetable oil, salt, and vanilla sugar. Mix well.
Step 2:
Add flour, mix and knead the dough.
Step 3:
Cover the dough with cling film and a towel and leave for an hour.
Step 4:
Place the cottage cheese in a clean bowl, sprinkle with sugar, add the egg and mix.
Step 5:
Mix everything with an immersion blender until smooth and mix again.
Step 6:
Punch down the risen dough and divide it into 10 pieces. Roll into balls.
Step 7:
Roll the balls into circles.
Step 8:
Make two arcuate cuts, spaced from the edge.
Step 9:
Place a portion of filling in the middle and overlap both arcs, connecting to the opposite edge.
Step 10:
Cover with film and a towel and let stand for 15 minutes.
Step 11:
Place the cheesecakes on a baking sheet lined with paper.
Step 12:
Mix egg yolks with milk and brush the top of the vatrushki, leaving the filling untouched.
Step 13:
Bake for 15-20 minutes at 200 degrees.
Cooking tips
The risen dough needs to be kneaded to remove air bubbles.
Divide the dough into pieces, dividing it in half and rolling it into sausages – this will make it more even.
