Eastern dessert Basbousa
Origin of the recipe
Unlike the fluffy and airy European desserts, Eastern sweets often include various types of sweet and spicy soft cookies, taffy, and candied or honey-dipped fruits and nuts. This is due less to the local mentality than to the hot climate, as large amounts of sugar or honey preserve foods better. One popular Eastern dessert is Basbousa, a sweet manna pie.

Step-by-step recipe
Step 1:
Pour equal parts of coarse semolina and regular semolina into a bowl.
Step 2:
Add finely shredded coconut, a pinch of salt and stir.
Step 3:
Pour 180 grams of granulated sugar into a ladle and pour in 200 ml of milk.
Step 4:
Add 120 grams of melted butter or ghee, 60 grams of honey and a teaspoon of vanilla extract.
Step 5:
Stir over low heat for a few minutes, then pour into the bowl with the dry ingredients and mix well.
Step 6:
Grease a frying pan with melted butter or ghee. Pour the mixture into the pan and smooth it out with a damp hand, then smooth the edges with a spatula.
Step 7:
Use a knife to mark the dough into equal pieces, without cutting all the way through.
Step 8:
Place an almond on each piece.
Step 9:
Bake at 180 degrees in the oven with grill only on the bottom flame on the middle rack.
Step 10:
Prepare the syrup. Place 340 grams of sugar in a saucepan, add 375 grams of water and 1 teaspoon of lemon juice, and cook for 6 minutes over medium heat.
Step 11:
Add a teaspoon of vanilla syrup to the boiling syrup. Stir and remove the saucepan from the heat.
Step 12:
Turn off the bottom heat of the oven, turn on the grill and brown the top until deep golden brown.
Step 13:
Pour the syrup over the hot basbousa and cut it into pieces, then pour over the remaining syrup.
Step 14:
Cool the dessert to room temperature and serve.
