Step-by-step recipe
Step 1:
Place the turkey piece in a saucepan and cover with water.
Step 2:
Bring to a boil and skim off any excess.
Step 3:
Cut the potatoes into small cubes and add to the pan.
Step 4:
Add salt, stir, bring to a boil, cover and cook for 10 minutes over low heat.
Step 5:
Pour vegetable oil into a frying pan, chop the onion and fry.
Step 6:
Finely chop or grate the carrots, add to the pan and fry for 7-8 minutes over medium heat.
Step 7:
Add the fried vegetables to the soup and stir.
Step 8:
Add rice, stir and cook for 10 minutes on low heat.
Step 9:
Remove the turkey from the soup and separate the meat from the bones.
Step 10:
Add pepper, stir and cook for 5 minutes over low heat.
Step 11:
Return the turkey to the soup, stir and remove from heat.
Step 12:
Serve garnished with parsley.
Cooking tips
Don't overcook the vegetables - if they burn, the soup will be bitter.
Instead of rice, you can add thin vermicelli.
Why add potatoes at the beginning of the cooking time if they only need to cook for 5-10 minutes? What will happen to them by the end of the cooking time?
