Chicken soup with dumplings
Origin of the recipe
Soup with dumplings—pieces of boiled dough—was first prepared in the Poltava province in the 19th century. Similar baked goods are made in all Slavic countries and even in the Caucasus. However, this recipe is more likely to use dumplings, as the dough for them is thinner than that for dumplings.

Make a flavorful and hearty dumpling soup with chicken broth. This recipe includes chicken broth, potatoes, carrots, onions, and garlic for a rich flavor. Dumplings made from wheat flour and eggs add tenderness and originality. Dried vegetables, bay leaves, and spices enhance the soup's flavor, while fresh parsley and green onions add a touch of freshness.
Step-by-step recipe
Step 1:
Place the soup set in a saucepan and fill with water.
Step 2:
Bring to a boil, drain and rinse the chicken.
Step 3:
Pour water over the meat again, bring to a boil and skim off the scum.
Step 4:
Add the whole onion and carrot to the pan, cover and cook for 30 minutes.
Step 5:
Pour vegetable oil into the frying pan and add butter.
Step 6:
Chop the garlic, add it to the pan and fry for a minute over low heat.
Step 7:
Finely chop the onion, add to the pan and fry for 5 minutes over medium heat.
Step 8:
Finely chop the carrots, add to the pan, stir and fry for 5 minutes over medium heat.
Step 9:
Remove the meat and vegetables from the soup. Separate the meat from the bones and chop.
Step 10:
Cut the potatoes into large pieces and add to the pan.
Step 11:
Add the fried mixture from the pan and stir.
Step 12:
Add salt, pepper, bay leaf and dried vegetable mixture.
Step 13:
Bring the soup to a boil, cover and simmer for 20 minutes over low heat.
Step 14:
Place flour in a bowl, add salt, turmeric and mix.
Step 15:
Beat 2 eggs into a bowl and mix.
Step 16:
 Add 4 tablespoons water, stir and let sit for 15 minutes.
Step 17:
Add chicken and stir.
Step 18:
Pour the dough into the pan through the holes of the dumpling grater and cook for one minute over medium heat.
Step 19:
Add chopped parsley and stir.
Step 20:
Remove from heat, garnish with green onions and serve.
Cooking tips
It's best to prepare this soup so that you can eat it right away, otherwise the dumplings will turn into mush when reheated.
The dough for the dumplings should have the consistency of thick sour cream.
Instead of a special grater, you can use a perforated panel from a steamer or simply spoon the dumplings into the soup.
