Cottage cheese and potato pancakes
Origin of the recipe
Cottage cheese or soft cheese pairs beautifully with boiled potatoes in the filling of a wide variety of baked goods, especially Caucasian ones. But mashed potatoes also work well in the most basic syrniki, which can be sweet, like "Saxon" syrniki, or savory, served with sour cream, herbs, and even fried onions. These syrniki don't melt in the pan and have a delicious golden crust.

Step-by-step recipe
Step 1:
Place the cottage cheese in a bowl.
Step 2:
Add egg and salt to the cottage cheese and mix.
Step 3:
Grind the cottage cheese in a blender until it becomes a smooth paste.
Step 4:
Boil the potatoes and place them in a bowl.
Step 5:
Mash the potatoes in a bowl and add the curd mixture.
Step 6:
Mix the curd mixture and potatoes.
Step 7:
Add flour to the mixture and stir.
Step 8:
Place a layer of flour on a plate.
Step 9:
Using your hands, form a small ball of dough.
Step 10:
Roll the ball in flour and flatten it a little, like a cutlet.
Step 11:
Heat vegetable oil in a frying pan.
Step 12:
Place the syrniki in the heated oil.
Step 13:
Fry the syrniki over medium heat until golden brown on both sides.
Cooking tips
If you don't have a blender, strain the cottage cheese through a fine sieve - this will soften it and make it smooth.
If the cottage cheese is sour, it would be better to add a little sugar.
You can use semolina instead of flour, but it will need to be given a little time to absorb moisture and swell.
