Step-by-step recipe
Step 1:
Place the cottage cheese in a bowl, add the eggs and sugar. Mix thoroughly until smooth. This type of cottage cheese makes the most tender syrniki.
Step 2:
Add flour and vanilla. Knead into a soft, non-sticky dough. If it's too wet, add a little flour—this will help the syrniki stay firm and stay firm.
Step 3:
Place small portions of dough on a lightly floured board. Roll them into walnut-sized balls—the base for the future stuffed syrniki.
Step 4:
Make a hole in the ball, place the filling inside (for example, a teaspoon of jam or raisins), pinch the edges tightly, and roll into a ball again. This way, you'll have authentic syrniki made with cottage cheese and filling—juicy, with a surprise inside.
Step 5:
Heat a frying pan with vegetable oil. Add the syrniki and fry over medium heat until golden brown on both sides (3–4 minutes). Cooking with the filling in a frying pan is the easiest and most reliable method.
Cooking tips
Use medium-fat cottage cheese—it gives the perfect consistency. Don't overdo it with flour, otherwise the syrniki will turn out dry. For even more juiciness, you can add 1–2 tablespoons of sour cream to the dough or use semolina as a flour substitute.
