Step-by-step recipe
Step 1:
In a deep bowl, combine sugar, a pinch of salt, vanilla sugar and softened butter.
Step 2:
Beat with a mixer on high speed for 4-5 minutes.
Step 3:
Add the eggs one at a time, continuing to beat, mixing each one for about a minute.
Step 4:
Sift a third of the flour and baking soda into the mixture, mixing at minimum speed.
Step 5:
Pour in half of the kefir, then the other third of the dry ingredients, the remaining kefir, and the remaining dry ingredients. Mix with a mixer until smooth.
Step 6:
Divide the dough into two parts and sift cocoa into one part and mix with a mixer at low speed until smooth.
Step 7:
Line a baking pan with parchment paper and pour two tablespoons of each batter into the center, one at a time. Finally, add one spoonful at a time.
Step 8:
If desired, use a wooden skewer to draw a pattern on the surface.
Step 9:
Preheat oven to 170 degrees Celsius on top-bottom without convection and bake for 45-50 minutes.
Step 10:
After letting the cake cool slightly, run a knife along the sides of the pan, remove it and let the cake cool completely.
Cooking tips
All ingredients should be at room temperature.
Sift the dry ingredients to break up any lumps and fold them into the dough in batches.
Check the cake's readiness with a wooden skewer; it should come out dry and clean.
If you want the top of the cake to be even, use a pan with a diameter of 20 centimeters.
