Origin of the recipe

Khvorost—deep-fried strips of dough—was once borrowed from Greek cuisine, but has long since become a staple in Russian cuisine. A large dish of crispy khvorost is a true highlight of any holiday table, a delight for children and adults alike. It's very easy to prepare, and the ingredients are very economical.

Step-by-step recipe

Step 1:

Brushwood-Step 1 Crack the egg into a bowl, add salt, water, and vodka. Mix until smooth.

Step 2:

Brushwood-Step 2 Add flour and knead into a stiff dough, first in a bowl and then on a floured surface.

Step 3:

Brushwood-Step 3 Place the dough in a bowl, cover with plastic wrap and leave to rest for 1 hour.

Step 4:

Step 5:

Brushwood-Step 5 Cut the rolled out dough into diamonds, make a slit in the center of each diamond and pull one end through it.

Step 6:

Brushwood-Step 6 Place the formed хворост (twigs) on a board and cover with plastic wrap. Repeat with the remaining dough.

Step 7:

Brushwood-Step 7 Pour about one and a half centimeters of vegetable oil into the frying pan and heat it over medium heat for 10 minutes to 170-180 degrees.

Step 8:

Brushwood-Step 8 Fry the brushwood until golden brown, about 30 seconds on each side.

Step 9:

Brushwood-Step 9 Place the хворост on a paper towel to remove excess oil.

Step 10:

Brushwood-Step 10 Sprinkle the brushwood with powdered sugar.

Cooking tips

Cover the part of the dough you are not working with with plastic wrap to prevent it from drying out.

The rolled out dough should be thin, like a sheet of paper.

Don't skimp on the powdered sugar, as the dough itself is not sweet.
