Homemade apricot ice cream
Origin of the recipe
Apricots themselves are an ancient fruit, known to humanity for thousands of years. They were popular in the Mediterranean and gradually spread throughout the world. Combined with dairy products, sugar, and other ingredients, apricots became the ideal choice for creating fruit ice cream.

Step-by-step recipe
Step 1:
Separate the yolks of three eggs from the whites and pour them into a saucepan. Reserve the whites.
Step 2:
Add some sugar and mix with a spatula.
Step 3:
While continuing to stir, pour in the milk.
Step 4:
Bring the mixture to a boil, stirring constantly, remove from heat and pour into a bowl.
Step 5:
Add vanilla and stir.
Step 6:
Add the remaining sugar to the whites, mix with a whisk and beat with a mixer.
Step 7:
Remove the pits from the apricots and puree them with a hand blender.
Step 8:
Gradually, while stirring, add the whipped egg whites to the hot custard mixture.
Step 9:
Add apricot puree and whisk.
Step 10:
Cool and place in the freezer for several hours.
Cooking tips
It is better to take milk with at least 3.5 percent fat content.
Do not boil the milk and egg mixture, just bring it to a simmer, as when making custard.
For ice cream, ripe, but not overripe, apricots are best.
