Origin of the recipe

Vinarterta is a multi-layered shortbread cake or tart filled with creamy jam, vanilla, and cardamom, a traditional Icelandic dessert also popular in North America. Its name translates as "Viennese cake," as the recipe came to Iceland from Vienna in the 19th century. Since plums don't grow in Iceland, the jam for these cakes was made from prunes shipped by sea.

Step-by-step recipe

Step 1:

Vinarterta-Step 1 Place the prunes in a saucepan, cover with water and cook, covered, for 30 minutes.

Step 2:

Vinarterta-Step 2 Puree the prunes with an immersion blender.

Step 3:

Vinarterta-Step 3 Add sugar (100g), cinnamon, cardamom, vanilla extract, and lemon juice. Stir.

Step 4:

Vinarterta-Step 4 Place the diced butter in a food processor bowl, add 300 grams of sugar and mix.

Step 5:

Vinarterta-Step 5 Add eggs and mix.

Step 6:

Vinarterta-Step 6 Place flour in a bowl, add cardamom and baking powder and mix.

Step 7:

Vinarterta-Step 7 Add vanilla extract to milk and stir.

Step 8:

Vinarterta-Step 8 Add some of the flour and vanilla milk to the food processor bowl, mix, then add the rest and mix again.

Step 9:

Vinarterta-Step 9 Sprinkle the surface with flour, lay out the dough, knead lightly, form a thick sausage, wrap in plastic wrap and put in the refrigerator for 30 minutes.

Step 10:

Vinarterta-Step 10 Dust the surface with flour and divide the dough into three parts.

Step 11:

Vinarterta-Step 11 Wrap a piece of dough in floured parchment paper and roll it out.

Step 12:

Vinarterta-Step 12 Open the parchment and use a rectangular container to cut out two rectangles.

Step 13:

Vinarterta-Step 13 Bake the cakes for 10-12 minutes at 180 degrees.

Step 14:

Vinarterta-Step 14 Make and bake five more of these same cakes.

Step 15:

Vinarterta-Step 15 Place the first cake layer on a rectangular plate and spread with prunes.

Step 16:

Vinarterta-Step 16 Repeat the same with the remaining five cakes and cover with the last one.

Step 17:

Vinarterta-Step 17 Wrap the dessert and the plate in plastic wrap and refrigerate for three days.

Cooking tips

Make sure there are no pits in the prunes.

If you don't have a food processor, you can use a stand mixer with a dough hook, but the process will be slower.

Make the seventh cake layer from the scraps of dough by mixing and rolling them out, then cutting them according to the template.
