Minced meat nests with mushrooms and tomatoes

This recipe is a typical example of modern home cooking, combining classic minced meat techniques (as in cutlets or zrazy), the idea of a "formed" stuffed dish (a nod to stuffed vegetables and meatloaf), and the use of readily available ingredients and simple baking techniques. Step-by-step recipe
Step 1:
Finely chop the onion.
Step 2:
Place the minced meat in a bowl, add chopped onion and two eggs.
Step 3:
Add salt, pepper, breadcrumbs and knead the mixture with your hands.
Step 4:
Form 6 balls.
Step 5:
Line a baking sheet with parchment paper and place the minced meatballs on it. Use a tomato to flatten the balls and make indentations in them.
Step 6:
Cut the champignons into thick slices.
Step 7:
Lightly fry in a pan. Season with salt and pepper and fry, stirring occasionally.
Step 8:
Add 100 g of sour cream and three triangles of processed cheese. Simmer, stirring.
Step 9:
Place the stewed mushrooms into the cavities in the minced meat.
Step 10:
Cut the tomatoes into slices and place one piece on top of the filling.
Step 11:
Grate the cheese coarsely and place a mound on top of each tomato. Bake in the oven for 30 minutes at 180°C.
Step 12:
While the nests are baking, prepare the sauce for serving. Combine 150 g of sour cream, oregano, salt, mustard, and lemon juice, and mix thoroughly.
Step 13:
Pour the sauce over the nests and serve.
Cooking tips
It is better to choose lean ground beef - fatty ground beef will hold its shape worse and is not as healthy.
Work with the minced meat wearing gloves – this way it won’t stain your hands and stick to them.
You can use any processed cheese that is sold in portions in the form of triangles.
