Step-by-step recipe
Step 1:
Slice the mushrooms, place them in a frying pan with a little vegetable oil, add salt and pepper to taste and fry until done.
Step 2:
Cut the onion into half rings and finely chop the parsley.
Step 3:
Place the onion and parsley in a bowl and pour in the apple cider vinegar.
Step 4:
Dice the red bell pepper.
Step 5:
Cut the chicken fillet pieces so that they open like a book.
Step 6:
Use a needle tenderizer to tenderize the meat and season with salt and pepper to taste.
Step 7:
Cut the fillet pieces in half lengthwise and place the first one in a parchment-lined dish.
Step 8:
Place a strip of bacon on top, sprinkle with onion and parsley, pieces of pepper and mushroom slices and cover with another piece of bacon.
Step 9:
Repeat these steps until you run out of ingredients. The final layer should be bacon.
Step 10:
Place two sprigs of rosemary on top and bake in the oven for 1 hour at 180 degrees.
Cooking tips
It is better to take fairly large champignons so that the slices do not turn into a shapeless mass when fried.
If you don't have a tenderizer, you can lightly pound the meat with a hammer.
