Step-by-step recipe
Step 1:
Cut the lamb into medium-sized pieces, finely chop the onion, and dice the tomatoes. Chop the ginger and garlic. Peel the medium-sized potatoes.
Step 2:
Melt the ghee in a saucepan over high heat and add all the whole spices. Fry briefly, stirring.
Step 3:
Add hot pepper and fry a little.
Step 4:
Add garlic-ginger paste and stir.
Step 5:
Add onion and fry.
Step 6:
Add tomatoes, stir and simmer.
Step 7:
Add all ground spices and salt to taste.
Step 8:
Add the lamb and stir lightly.
Step 9:
Pour in hot water, add whole potatoes, cover and simmer for an hour and a half.
Step 10:
Add yogurt or sour milk and finely chopped cilantro. Stir and serve with rice.
Cooking tips
If a recipe calls for ghee, you should use it, not just any clarified butter – ghee is prepared according to a special recipe and is the purest form of butter.
Do not overcook the onion, otherwise it will taste bitter.
The lamb should be completely tender by the end of cooking.
