Step-by-step recipe
Step 1:
Cut the chicken into medium pieces.
Step 2:
Finely chop the onion.
Step 3:
Chop the ginger and garlic.
Step 4:
Pour mustard oil into a frying pan, add salt, cumin, cloves, black and green cardamom, cinnamon and bay leaf.
Step 5:
Add the onion and fry, stirring, until golden brown.
Step 6:
Add garlic and ginger, stir.
Step 7:
Add hot peppers if desired.
Step 8:
Place the chicken in the pan, stir and fry until golden brown.
Step 9:
Pour in the tomato puree, stir and simmer for a while.
Step 10:
Add curry powder, hot pepper or paprika, turmeric, ground black pepper, ground coriander, salt and sauté for two minutes.
Step 11:
Pour in hot water and cook for 20 minutes under a lid over medium heat.
Step 12:
Serve with rice or flatbreads.
Cooking tips
Be careful not to let the spices burn – they should just release their aroma.
If you don't have ready-made tomato puree, puree 4 medium tomatoes in a blender.
Add only hot water, otherwise the taste will be spoiled.
