Chicken breast with cheese and tomatoes in a frying pan

Prepare a hearty and delicious dish of tender chicken breast in a tomato-cheese sauce topped with melted mozzarella and roasted cherry tomatoes. You can add any side dish to the chicken and tomatoes, but it's also delicious on its own.

Step-by-step recipe
Step 1:
Cut the cherry tomatoes into halves.
Step 2:
Drain the mozzarella cheese and cut it into slices.
Step 3:
Cut the chicken breast in half thicknesswise, season with salt, pepper and sprinkle with flour on both sides.
Step 4:
Pour olive oil into a frying pan, add the chicken and tomatoes. Season the tomatoes with salt and pepper.
Step 5:
When the skins on the tomatoes have shriveled slightly, remove them from the pan.
Step 6:
Fry the chicken breast on both sides until golden brown and remove from the pan.
Step 7:
Place the chopped garlic in the pan and fry over low heat.
Step 8:
Add tomato pasta sauce, vegetable broth or water.
Step 9:
Grate Parmesan into the pan.
Step 10:
Place the chicken breast in the pan, add the liquid and coat the chicken evenly with the sauce.
Step 11:
Top the chicken with mozzarella pieces, cover with a lid and let the cheese melt.
Step 12:
Place the chicken and cheese on a plate along with the sauce.
Step 13:
Top with tomatoes, garnish with basil leaves, sprinkle with Parmesan and serve.
Cooking tips
Dredge the chicken in flour before frying to prevent it from drying out and to preserve its flavor.
Do not fry the chicken breast for too long.
You can add basil pesto sauce before adding the tomatoes to the pan.
