Step-by-step recipe
Step 1:
Cut 4-5 pieces of white bread, cut off the crusts, place in a deep bowl and cover with water.
Step 2:
When the bread is soft, squeeze it out and weigh out 200 grams of bread mixture for the stuffing.
Step 3:
Pass the meat, onion, garlic and squeezed bread through a meat grinder.
Step 4:
Add salt, pepper, pour in water and thoroughly knead the cutlet mixture with your hands.
Step 5:
Beat the mixture against the bottom of the pan until it turns light brown. Form patties, continuing to beat them between your palms.
Step 6:
Roll the cutlets in flour.
Step 7:
Heat vegetable oil in a frying pan and fry over medium heat on all sides until cooked through.
Cooking tips
The ideal ratio of squeezed bread to meat should be 40 percent.
The minced meat should be beaten in order to beat the water into it and release the protein.
Fry the cutlets not only on both sides, but also on the sides when they rise.
It is most convenient to turn the cutlets over using two spatulas.
Adjust the heat so that the cutlets do not burn.
