Step-by-step recipe
- Cut the chicken breast into small pieces and place in a bowl.
- Add salt, pepper, and lemon juice. Mix well.
- Cover the bowl or container with a lid and refrigerate for an hour.
- Remove the core from a small sweet pumpkin and cut into half slices.
- Place unsweetened peanut butter, soy sauce, cooking wine, and honey in a saucepan and stir to combine.
- Place the marinated breast in a plastic bag, sprinkle with flour and shake to coat the chicken.
- Fry the pumpkin in a small amount of vegetable oil on both sides and remove from the pan.
- Add the chicken to the same pan and fry lightly.
- Move the chicken to the edge of the pan, add butter to the empty space and melt.
- Pour the prepared sauce into the oil and mix with the chicken.
- Spread the chicken around the edges of the pan and add the pumpkin to the center. Stir gently to prevent the pumpkin from falling apart.
- When the sauce thickens, turn off the heat, season with pepper and stir again.
- Arrange on a plate, alternating pumpkin and chicken, and top with chopped peanuts.
Cooking tips
Instead of chicken breast, you can use boneless chicken legs.
Do not overcook the chicken, just enough to change the color.
The pumpkin can be pre-baked in the microwave for 3 minutes at 700 W.
