Whole chicken is most often baked in the oven. But there's a trick that allows you to cook chicken perfectly in a frying pan without overcooking or drying it out. If you cut and flatten the chicken, it will cook perfectly through. Buttering it prevents burning, and instead browns evenly, beautifully, and deliciously. It's even more delicious if you sauté the fried chicken with mushrooms.
Step-by-step recipe
Step 1:
Cut the chicken in half along the breast side, turn it over and unwrap it. Make slits along the sides.
Step 2:
Cut 200 grams of butter into cubes and place in a bowl.
Step 3:
Add chopped parsley, 20 ml lemon juice, salt and stir until the butter melts.
Step 4:
Brush the chicken with butter on both sides.
Step 5:
Fry the chicken in a frying pan with a little vegetable oil on both sides.
Step 6:
Cut three small onions into half rings and fry until golden brown.
Step 7:
Add salt, pepper, ground coriander and stir.
Step 8:
Slice the mushrooms and add them to the pan. Fry briefly, stirring occasionally.
Step 9:
Place the chicken in the pan, cover and cook for 35 minutes over low heat.
Step 10:
In a bowl, combine parsley, mayonnaise, dill, green onions, mustard and 4 crushed garlic cloves.
Step 11:
Serve the chicken with the prepared sauce.
Cooking tips
It's best to buy young, not very large chicken, and chilled rather than frozen. It shouldn't have an unpleasant odor, the skin should be light pink, and the meat should be firm.
It is better to choose small mushrooms, so they will fry faster and more evenly.
