Step-by-step recipe
Step 1:
Pour 2 tablespoons of vegetable oil into a frying pan and add 700 grams of skinless chicken drumsticks.
Step 2:
Add a teaspoon of chili powder, half a teaspoon of pepper, and a teaspoon of salt. Mix well.
Step 3:
Cover and cook until the seasoning is absorbed into the meat and the juices are released.
Step 4:
Remove the chicken from the pan and set aside in a separate bowl.
Step 5:
Slice two medium onions into half rings and add them to the pan with the sauce. Stir and lightly fry, stirring occasionally.
Step 6:
Add salt to taste and stir.
Step 7:
Chop the garlic and ginger and add 2 teaspoons of this mixture to the pan. Stir and simmer briefly.
Step 8:
Add a teaspoon of chili powder, a teaspoon of garam masala, and half a teaspoon of black pepper. Stir and cook, stirring occasionally, over low heat.
Step 9:
Add 50 ml of water. Stir.
Step 10:
Return the chicken to the pan, add the small red peppers and chopped cilantro. Stir.
Step 11:
Cut three small tomatoes into slices and mix.
Step 12:
Add salt to taste and stir.
Step 13:
Cover and simmer for 10 minutes over low heat.
Step 14:
Add a tablespoon of julienned ginger and a tablespoon of cilantro. Cook, stirring, for 2 minutes over low heat.
Step 15:
Add a tablespoon of butter, stir, divide into plates and serve.
Cooking tips
Stir the contents of the pan while frying the spices to prevent them from burning.
Garam Masala is a common Indian spice. If you don't have it ready-made, you can make your own using 2 tablespoons cumin seeds, 2 tablespoons coriander seeds, 1 tablespoon cardamom seeds, 1 tablespoon black pepper, 1 teaspoon cloves, 2 teaspoons grated cinnamon, and 1 teaspoon grated nutmeg. Lightly toast the spices, except for the nutmeg, and grind them in a coffee grinder.
